Pavlova


4 eggs whites
1 cup sugar
1 1/2 tsp cornstarch
1 tsp white vinegar

Beat egg whites in bowl until very stiff. Slowly beat in sugar--if you do it too quickly the whites will fold and will not set up. Sprinkle cornstarch and vinegar, and fold into whites. Put on greased foil on cookie sheet as either a 7 in circle or small individual shells. Bake at 250 for 1 hour 10 min. Turn oven off and let cool inside. DO NOT OPEN OVEN during process or may not work. After cool, serve with fresh fruit (blueberries, raspberries, strawberries, kiwi or whatever comes to mind) and whipped cream. You'll LOVE it!

Irresistible Granola Bars


2 1/2 c rice krispies cereal
2 c oats
1/2 c raisins or chocolate chips
1/2 c brown sugar
1/2 c honey
1/2 c peanut butter
1 tsp vanilla

Mix oats, cereal and raisins/chips in bowl. Set aside. Bring sugar and honey in saucepan and bring to boil. Remove from heat and add the peanut butter and vanilla. Mix well. Pour over cereal mixture. Pour into greased 9x13 pan. Voila!

*variations: craisins, coconut, crumble and use as cereal.

English Muffin Bread - from start to finish in 1 hour!

ENGLISH MUFFIN BREAD




7 1/2 Cups flour (I usually only end up using about 7)

4 1/2 tsp sugar

1 T salt

1/4 tsp baking soda

3 env. active dry yeast

3 C milk

3/4 C water

corn meal (optional)



Grease 2 large loaf pans and sprinkle with cornmeal if desired. Set aside 3 C flour. In a large bowl (i use my kitchenaid mixer), combine remaining flour, sugar, soda, salt, and yeast. Combine milk and water and heat until quite warm (i do this in the microwave for a couple mins). Add liquids to dry mixture and beat well. Stir in enough of reserved flour to make a stiff batter (will be sticky). Spoon into prepared loaf pans. Sprinkle with a little more cornmeal. Cover and let rise about 30 mins (i usually put my oven on 200, then turn it off and let it rise in there, but watch it b/c you don't want it to rise too high.) Bake at 400 degrees for 25 minutes. Remove from pan and cool.



I hope you don't mind all my little notes in there. It is also super good mixed with italian seasonings, grated cheese, and Wegmans Basting Oil with garlic and herbs lathered on top a couple times. I've also heard it works well with wheat flour too. And I especially like it toasted with butter and honey or butter and cinnamon sugar.  ENJOY!!!

Hello Dolly Bars

Put in the bottom of an 8" square baking pan in the following order:

1 stick butter, melted
1 cup graham cracker crumbs
1 cup chocolate chips
1 cup butterscotch chips
1 cup shredded coconut
1 cup chopped walnuts

Pour 1 cup condensed milk over the top, bake at 375 for 20 minutes or until coconut is browned. Refrigerate overnight. Cut into squares...Enjoy!

rice krispy brownies


the pictures do not do them justice, but these are the most delicious brownies you will ever taste. i first had them about 4 years ago at a book club and have been making them ever since i got the recipe. they are yummy.

please make them, but do not yell at me when you gain 5 pounds.

rice krispy brownies

1 c. butter
2 c. sugar
4 eggs
6 T. baking cocoa
1 c. flour
1/2 t. salt
2 t. vanilla
1-7 oz jar marshmallow creme
1 c. creamy peanut butter ** i only use 1/2 cup because i don't like too much pb)
2 c. (12 oz.) semi-sweet chocolate chips **i use milk chocolate
3 c. Rice Krispies

In a mixing bowl, cream butter & sugar, add eggs and beat well. Stir in cocoa, flour, vanilla, & salt. Spread into a greased 13x9 pan. Bake for 25 min in a 350 degree oven.(do NOT overcook the brownies..they might not look done, but trust me, they are!) Let cool. After cooled, spread marshmallow creme over cooled brownies. In a medium saucepan, melt peanut butter, & chocolate chips, stirring constantly on low heat. Remove from heat & stir in rice krispies. Spread over marshmallow layer. Chill before cutting & store in the refrigerator.

these taste best cold, straight from the fridge.
